Chef Mike's culinary journey ignited during his college days at the University of Illinois at Champaign-Urbana, where he initially pursued a degree in Chemistry. However, the allure of the culinary world captivated him, prompting a transformative switch to the Culinary Institute of America in Hyde Park, New York, where he graduated with distinguished honors.

Embarking on his professional path, Chef Mike's culinary skills were fine-tuned during an externship at Le Bec Fin in Philadelphia, mentored by the esteemed Certified Master Chef Georges Perrier. Post-graduation, he set his sights on the vibrant culinary scene of New Orleans, securing a position at Peristyle under the tutelage of the James Beard Award-winning Chef/Owner Anne Kearney.

Chef Mike's time in New Orleans enriched his repertoire with extensive experience in Cajun and Creole cuisine, complemented by a mastery of French techniques and an in-depth knowledge of cheeses. Returning to his roots in Chicago, he joined the prestigious Michelin Star restaurant Spiaggia as their Formagiaio.
