Captain: Adam Dreffin
CAPTAIN: ADAM DREFFIN
Adam was born in the Exumas aboard the boat of his parents. He was a real water baby. He shot his first lobster at age 6. As a youth, Adam would disappear into hidden coves with his brother, trolling for fish while handling a sailing dinghy. He explored everywhere and is familiar with every island. His passion for the Bahamas is evident.
Adam's parents, along with his younger brother Warren, all set off for a world cruise on their sailing boat once the boys reached teenage years, so Adam is also very widely travelled to many exotic parts of the world. When they reached Australia the boys went to school and college there, whilst their parents continued their cruise back home to the Bahamas.
Summers during school, Adam captained catamarans for Broadreach Sailing School in the French West Indies with high school kids aboard. He's also captained large yachts in New England and delivered vessels from the Mediterranean. He has run charters aboard Rubicon for several years in Exumas, Bahamas.
Adam holds an MCA Master of Yachts 200 Tons. In addition to being a highly skilled captain, he is an avid sportsman on the water. He kite-surfs, windsurfs and relishes catching game fish while trolling between islands. He is also certified as a Sivananda yoga instructor.
CHEF/HOSTESS SOPHIE DIFILIPPO
Sophie is highly skilled , both as a chef and a captain holding a USCG Master license. She has a magnetic smile, an endearing personality and radiates the kind of happy that rubs off on everyone around her. Maybe that’s because she grew up on a small farm outside of Philadelphia with three, doting older brothers. Loving, fun yet challenging, a lot like yachting.
Sophie says, “Growing up I always had a strong passion for the ocean. I always waited with excitement for Friday after school to race down to the beach so I could go sailing. I was always outside, snowboarding in winter and in summer fishing and playing in the creek behind our house. On summer weekends my Dad and I would head to the beach to sail, racing most Wednesday nights on the Chesapeake.”
It was also thanks to Dad that Sophie became such an excellent chef. He taught her his Great Grandmother’s Italian recipes and she grew up cooking for the family. When she was just 14 years old she began working in an Italian restaurant and by 17 she was working on sailboats as a chef/mate. She quickly achieved her captain's license and worked as a delivery skipper. For the last two years she’s been delighting guests as chef/mate aboard a charter yacht in the Exumas, Bahamas.
Favorites meals to prepare: Italian dishes, fresh fish, and Greek dishes. Friends and guests especially rave about her sauces. Sophie is also adept at special meals, kids’ menus and restricted diets. Her motto: “Do what you love and love what you do.” Cooking and eating well top the charts!!

Reviews
Brief summary: the experience exceeded John and my expectations. We BELIEVE our nephews (one found a lovingly well read paperback of DOVE on the bookshelf and read it throughout the week…telling!). Adam instructed the 3 of them to kite surf…all 3 thrilled with the opportunity.
Adam and Sophie …truly a dream team. For certain they have been working together for several years now although each individually is caring and kind as well as skilled, competent and responsible in what they do.
Thank you too Marilyn for all your help and guidance.
After all these years- WE DID IT WITH THE FINAL 3 NEPHEWS-!

This trip to the Bahamas is something I've always wanted to do, and my son and I could not have picked a better crew or boat for this experience.
Thanks again!

My husband and I had wanted to charter a yacht for 15 years in the Bahamas and we finally did it, so this was our first charter ever. We really didn't really know what to expect however we knew it would be a very special vacation. Wow does even begin to describe our trip. The Bahamas is a vey special place and we can't wait to go back. It may have been our first time, but certainly not our last trip. Our crew, Adam and Sophie, made us feel immediately welcome and it didn't take long before we knew we had made life long friends. I can't image doing another charter in the Bahamas unless its with them. They made every effort to accommodate our needs as indicated on the survey we completed prior to sailing and absolutely nailed it! Actually the went above and beyond and made us feel so special. This vacation will live in our memories forever.
Tammy
Thank you so much Adam and Sophie for making my client's dreams come true!! It has been a pleasure working with you and I hope to continue to do so as often as possible.
Warm Regards,
Ellen
My wife Debbie said it was the best vacation that we have taken and I agree! Adam and Sophie were great we enjoyed their company and shared many things with each other of our life experiences. We saw lots of wildlife. Dolphins came a swam with us in front of the boat for several minutes. While snorkeling we saw sting rays and sea turtles as well as numerous fish! And who could not enjoy the most beautiful water in the world not to mention gorgeous sun rises and sunsets, even a full moon one night! Adam caught a Mahi-Mahi fish which was prepared an we ate. Many wonderful memories we have to cherish the rest of our lives!!
Sophie is an incredible baker. Her daily fresh breads were a treat! Her chicken was a little overcooked but overall a great cook. Her fish dishes were also wonderful even the cracked conch which I had my doubts about. 4/5
We rated the yacht (comfort, features, general maintenance, etc) 4/5
We qualified the sports and leisure activities/equipment on board as a 4/5 (although maybe add some extra floating devices) (Adam - yes we shall add to Rubicon)
We qualified the food and drinks as 4/5
Adam could come up with a couple more daily drink specials. We are mostly a beer and wine group so we were happy. (Adam - no problem I can certainly add a few more choices!)
We qualified the entire experience of our trip as 4/5. We had some rainy weather that put a damper on a couple days but it was of no fault to the crew.
Adam and Sophie made our 25th wedding anniversary special and memorable. I can't thank them enough for the amazing experience and for being so accommodating with all our requests.
The captain was very experienced with sailing and quite knowledgeable with the area. He seemed to have a real understanding of exactly what we wanted to see and do. The crew also made our trip one to remember with the delicious meals and enjoyable socializing. We enjoyed their interaction and getting to know them. It was hard to say good by at the end of the trip. Just exactly what we were wanting. Relaxed, away from the crowds, quiet, and a real experience with some of the local culture.
We want to just let Captain Adam and his cook Jenn know that we will always treasure the experience we had on Rubicon. It was a special time getting to know them. The Bahamas are beautiful, but their hospitality was the icing on the cake. Thank you again!

Captain and chef were very courteous, knowledgeable and attentive to any request. The captain, Adam Dreffin was extremely knowledgeable about the area. He was able to plan the days according to the weather, currents and times of tourist boats coming to the different sites. Because of this we were able to avoid crowds and enjoy each spot. We hit all the tourist places and more. Because of the planning we were also able to make the most of the sunshine when available.
Our chef, Jen, was enthusiastically health conscious. There was plenty of food and it was flavorful and filling and varied. Adam was very relaxed, friendly and knowledgeable.
The yacht was comfortable, and clean. The itinerary was more than we expected. Adam was able to fit two or three destinations into one day (without seeming rushed). We were able to fit snorkeling into most days. Adam kindly agreed to let Michelle and Mike scuba off the boat and got four tanks for them. They were able to scuba three times while the rest of us snorkeled.

the area and secluded spots to go. Jen was awesome. Gifted at creating unique food combinations using common ingredients. Crew was 5 Star!
Yacht: Older boat, but very comfortable and functional.
Itinerary: A great combination of remote, secluded spots and a couple of stops in 'civilization'.
Sports & Leisure: Kayak and paddle boards were excellent. Snorkel and spearfish gear fine as well.
Loved being able to troll for fish off the stern while under sail (caught four fish, one was delicious!).
Food & Drinks: Adam makes a great gombay smash. Jen's appetizers were fantastic.
We are now officially hooked on sail chartering!
D.
Adam and Jen are such nice people. Scenery unmatched!
Thanks for arranging.
Did the crew live up to your expectations? I really had no expectations but Adam and Jen were unbelievably welcoming and accommodating. We all made new friends
How would you describe the food and drinks? Fish is good but not at every meal.
Were you involved in planning the itinerary? We just went with the flow, it was great.
What did you like most about your charter? Blue water everywhere and the crew.
Would you recommend this yacht and crew to your friends? Absolutely
Can you give me any hints as to how I can provide my clients with an even better experience? Good sun lotion is a must and a long sleeve shirt is a good idea too. Don’t bring half the clothes you think you need.
Is there anything in particular you wish you had known in advance? August is off season in the Bahamas so restaurants are not well stocked. Georgetown is a rather impoverished area (Friendly people but not much to do)
Is there anything else I should know? Adam was raised on the water and grew up in the Exumas, his knowledge of the area is outstanding.
Would you recommend chartering a yacht or boat to others, now that you have done it yourself? Yes
Brian
To say this trip was AMAZING would be an understatement! It was life changing! Every part of my being has been touched and my life is altered forever. Thank you is not enough. I am forever grateful that we made this trip. You hold a place in my heart forever!
God Bless you always, with love,
Nancy Z
P.S. Thank you for Jennifer.

Feedback to Broker: The crew was friendly, knowledgeable, attentive and accommodating. I cannot sing my praises high enough for Adam and Tina. Adam was a highly skilled captain with excellent knowledge of the area we cruised. He knew when and where to go for drift snorkeling, and as a result our snorkeling experience was better than any previous trip. Tina was a friendly and joyful host.
The Rubicon was comfortable, clean and well ventilated. I liked the fact that each cabin had its own head. The Rubicon was the perfect mix of performance and comfort.
Tina was a great hostess and cook. I ate better on the boat than I eat at home. Tina manages the difficult mix of preparing food the tastes, great but is healthy as well. I usually put on weight during vacation and did not on this one, but I ate like a king. Fresh baked bread, muffins and much more.
The Exumas this time of year is just amazing. I have traveled the Caribbean for many years and the best beaches and water is in the Exumas. The crew has cruised these waters for many years and they have extensive knowledge of where to go and what to do. Adams was well connected with the local people and this made for a great experience. A real bonus of going this time of year (July) is that no one is there. We had all the beaches and anchorages to ourselves.

Adam was a wonderful captain and Tina...oh, Tina!!!! Super Tina. We loved her. She cooks so well and made us feel comfortable. She was so sweet with us, and funny too. Both made us remember this trip...
This was the best vacation we had all year! Thanks for all!
Josephina

Overall a great week in the Exumas. Adam was even able to procure some additional Conch for us so we had several opportunities to enjoy it during the cruise.
